Its distinctive cane-based flavour profile evokes all the pleasures of a tropical holiday, enabling it to pair perfectly with luscious fruit flavours like mango, strawberry and pineapple. Whether you’re planning to sip them on the beach or in a deckchair on the patio, we think these dreamy cocktails will give you all the summer feels.

Fruit Daiquiri

In many ways, the daiquiri trifecta of white rum, lime juice and sugar (4:2:1) is hard to beat. Simply combine the ingredients and shake with ice before straining into a coupe or Martini glass for optimum effect. But fruit daiquiris add a pop of fun to any party. Edmunds’ deliciously summery Strawberry Daiquiri  and Mango Daiquiri cocktails are both made from premium Suffolk Distillery white rum, with a dash of strawberry/kumquat liqueur and fruit puree for extra flavour. 

Rum punch

The classic rum punch usually incorporates citrus/spice flavours with the spirit base. Feel free to explore different combos to find your favourite but a good starting point is to belnd equal quantities of light and dark rum with pineapple, orange and lime juices plus a dash of grenadine. Shake until well chilled before straining into a Collins glass over fresh ice and garnishing with a maraschino cherry.

Mojito

You can‘t go wrong with these summer essentials – rum, mint, lime, sugar syrup, and soda water. Simply muddle fresh lime slices with sugar syrup and mint leaves in a small jug till well blended then tip into a highball glass filled with ice and pour in the light rum, stirring thoroughly with a long-handled spoon. Top up with soda water, garnish with mint and serve. For a fresh take on this summer classic, muddle a few cubes of watermelon with the mint and sugar before adding the rum and soda. 

Piña Colada

The taste of every beach holiday you’ve ever had in a glass of fruity, creamy perfection. The smoothie version has become the default Piña Colada setting but it’s just as easy to blend this classic combination of rum, pineapple juice, coconut cream, and lime juice in a shaker before straining over crushed or pebbled ice in a hurricane glass. It’s obligatory to garnish with a slice of pineapple and a cherry – maybe even a cocktail umbrella for a vacation vibe.
